Most of the joint cartilage is made up of water (70-80%) with the remainder being elastic collagen fibers, chondrocytes and proteoglycans. Chondrocyte cells contained in the cartilage produce proteins known as proteoglycans which are linked to glycosaminoglycans, or GAGs for short. These important chondrocytes build and repair the collagen fibers and proteoglycans using glucose to maintain the worn cartilage.
